If you just want to count the number of bird of a same species in a photo, you could probably use a separate "count" tag with the number of bird of the determined species in the photo, but for different species, may be try with the face tag in digikam which may be permitt to tag some areas in a photo ? (But personnally I don't use it).

There is a free-form field "caption". Using that in combination with the
keyword (e.g. keyword "Jackdaw", and in the caption "5 jackdaw") might do what
It also depends on what you use to do the later analysis. E.g. under linux it
isn't difficult to extract XMP tags/fields, and then analyse those with the
standard command-line tools (grep, awk, ...). Or go straight to the database
and extract the info from there.
